A La Gramercy Tavern........

This pie combines two sandwiches, one served at the Serious Eats All-Star Sandwich Festival and Gramercy Tavern and a breakfast sandwich also served at Gramercy Tavern. The sandwiches are part of the unpublicized $14 soup and sandwich special.(a great deal)  Both use
smoked ham/theirs is done in house, Fontina (my bet is Italian), and are served on a Balthazar's potato-onion bap/role. One has crispy vegetables and a garlicky aioli the other an egg. This pie has Westphalia smoked ham/ prosciutto, Fontina Val d'Aosta, sautéed onions, an egg, and roasted garlic and lardons mixed with the cheese, and topped with arugula for color and texture.  Cooked in my convection oven on a cast iron pizza pan...
Ready to cook.....

Roasted Beet Warm Goat Cheese Pizza.......

One of my favorite combinations is roasted yellow beets with fresh goat cheese.
The other day I found the monster below and quickly picked up a log of goat cheese.
My plan was to make a salad but a friend from work inspired me.
He made a goat cheese pizza with chive oil and fresh basil.
Ok, goat cheese roasted beet pizza......
I found a recipe for a goat cheese salad with two kinds of lettuce, diced beets, candied pecans, sweet peppers and scallions with a honey mustard vignette.
The plan: bake the crust on the grill, flip and top with goat cheese and serve the warm goat cheese crust topped with the salad.
When I started chopping I also found a cucumber and a few orange tomatoes and only arugula.....
Oh well........
Very nice.......
The honey mustard dressing was lovely.....

Korilla Korean BBQ Kimchi Taco Inspired Pie.....

A few weeks ago I had the pleasure of joining one of my tour guide friends for a Food Cart Tour of The Financial District  NYC.
The tour is hosted by Urban Oyster Walking Tours of NYC. http://amusebouche1.blogspot.com/2011/07/wall-street-nyc-food-trucks.html
Our second to last stop was Korilla Korean BBQ for a Korean Kimchi Taco
 http://korillabbq.com/
I believe the taco is topped with a kimchi, a special hot sauce and a kimchi pickle…..
Really good, as was the kimchi…
As you guessed it a pie was born…….
Korilla used corn taco shells.....
I could have used a flour tortilla but decided to make a crust with.....
Masarepa/Harina de Maiz Blanca/White Corn Meal,
all-purpose flour, yeast, salt, oil etc…
a modified pizza crust......
 Top with......
Radish Kimchi and Mild White Kimchi......
  Toppings......
Smoked pulled pork with a sesame, soy,
hot sesame oil, rice vinegar, brown sugar sauce....
Both types of kimchi.....
Shredded romaine....
Homemade pickled cucumbers....
More sauce.....
On a cornmeal pizza crust......
Ok Slicers what pearl like ingredient did I not list.....
